Roger and Isabel’s farm, Las Mercedes, sits at 1330 masl in the Matagalpa region They have a true passion for growing coffee and experimenting with growing/processing techniques.. Their farm has a clean water source that supplies the community below with drinking water. They also developed a system of perforated tubing they placed under the groves of trees so that runoff from washing coffee is filtered by the earth instead of polluting streams.
Producer Don Roger has a degree in agronomy. Using this technical knowledge, his farm has perfected several varietal blends and paired them with the right processing techniques to create incredibly unique flavor profiles. This takes years/decades of patience and diligent effort to see the results of experimentation. This microlot is a tropical fruit symphony of varieties, including the much prized Geisha, naturally processed, and lovingly called “tutty fruity” by producer Doña Isabel.
This coffee gives off aromas of tropical fruits and coffee blossoms, is ntensely fruity and juicy, and flavor notes include guava, mango, papaya, lychee, honey, cherry, and red delicious apple, with a lingering finish.
