Mario & Angelica's farm,"The Miracles" (Los Milagros) is located in Jinotega at 1400 masl. When Mario’s parents owned the farm, only vegetables were grown. While they continue to grow cabbage, corn, potatoes, carrots, etc., they are transitioning away from vegetables and toward greater coffee production in the interest of the health of the land and diversification of marketable crops to keep the farm lucrative enough to pass down to their children.
The region where this coffee was grown stays cooler than the rest of Nicaragua, thereby leading to a later harvest, and more time for cherries to develop increased sugar content, leading to sweeter coffee.
This washed process blend of coffee varieties has a juicy mouthfeel, a straightforward clean acidity, and is well balanced. As this coffee cools, fresh apple notes give way to a more dried apple characteristic, complemented by flavors of caramelized sugar and baking spice.
