Juan Puerta is a food engineer who processes his microlots in different, innovative ways. With his background, he gives technical guidance to workers in order to improve the quality of these innovative coffees produced there. Due to his drive to push the limits of processing, he created his own coffee company “Sens Coffee” and started searching for partners.
Hailing from the Quindio region of Colombia, a current hot spot for experimental coffees, this coffee was co-fermented with peach. After these coffee cherries were picked, they were washed and sealed in tanks for 12 hours, during which a liquid slurry formed (mosto). Yum, right? This mosto was then combined with peaches and a glucose syrup, which was then mixed back into the tanks to continue fermentation. When complete, the coffee was drained and quickly dried to a specific moisture content to stop fermentation. Then it was honey processed just as any other honey processed coffee would be, where some mucilage is maintained on the coffee parchment.
This complex coffee shows loads of peach notes, interesting peppery and floral notes, and some playfulness between citrus and other tropical flavors as the coffee cools.
